Snapper Stock
Fish stock from Snapper heads and frames.

Introduction
An easy recipe that makes a delicious fish stock from Snapper heads and frames.
You can often buy packaged Snapper heads and frames from super markets and fish markets for a decent price, in my case here I bought ~700g of heads and frames for 200 yen.
This is a really cost effective base for ramen and soups.

Equipment
- Pressure cooker
- Strainer
- Bowl
Ingredients
| Quantity | Item |

| 1.5 kilograms | Snapper heads and frames |
| 2-2.5 litre | Water |
| 1 | Onion |
| 1/2 teaspoon | Peppercorns |
| 2 | Bay leaves |
| 2 tablespoons | Kosher salt |
| drizzle | olive oil |
Instructions
Unpack the heads and frames, and place them into the pressure cooker inner pot.

Add the bay leaves, peppercorns and salt.

Chop the onion into quarters and add to the pot.
Add the water.

Pressure cook for 20 minutes.

This is what the result should look like.

Strain the liquid into a large bowl.

Keep straining until you have only liquid left.

You should be left with a liquid that looks like this.

Refrigerate overnight.
